Atlantic and Caribbean

Named after the Carib, aggressive tribes who overwhelmed the peaceful Arawak before themselves falling victim to Europeans, the Caribbean is home to hundreds of islands, including a long arc of islands that run northwestwardly from just off the Venezuelan coast to Cuba off the Florida coast. Caribbean cuisines were largely determined by European colonizers (Dutch, Spanish, French, British), by the countries they traded with, and by the slaves and laborers who worked the plantations. West Africans contributed yams, peanuts, black-eyed peas, okra, and plantains. Cuba, the Dominican Republic, and Puerto Rico show Spanish influence, characterized by plentiful pork and rice dishes. Jamaica has an English flavor, characterized by tea time and fish and chips. Famous for “jerked” meats, Jamaican cuisine also features conch and crab fritters, fish soups, and pork stews. The Caribbean gave birth to barbecue – the word comes from an Arawak word “brabacot” (which became barbacao in Spanish and barbecue in English).

Imitation Meatloaf

I thought this "meatloaf" was okay tasting. I ended up adding twice as much rice to the batter because I made it too salty, so the extra rice fixed that. What I wasn't crazy for in reality was the thyme taste, it was only a tsp but I thought it was strong. I will make again with another spice of my preference. My husband LOVED exactly how it came out and said he wouldn't change a thing. He wants me to make it regularly, so I guess that is good.

Black Bean, Corn and Turkey Chili

This is pretty good. Did not use as much chili powder as the recipe called for. Used half of a 15 oz can of black beans and about 3/4 of a 15 oz can of white beans, drained and rinsed. Used home made salsa and about a half cup more than the recipe originally called for. Used brown sugar as well. Easy and quick.

Butternut Squash with Onions and Pecans
